A Win-Win Recipe- Arugula & Strawberry Salad

I hear you’re loving these salad substitutes to tasteless greens, so here’s a salad that is anything but!

Strawberry, Arugula Walnut SaladMost people love the taste of strawberries. And we encourage everyone to eat what they love while giving their body what it needs.  That’s why we call it a win-win!

Want more good reasons to substitute strawberries for less healthy foods?

Strawberries are a good source of Folate, Potassium, Vitamin C, Manganese and Dietary Fiber.  They’re also low in Saturated Fat, Cholesterol and Sodium.

Arugula is a rich source of Iron and Vitamins A and C.

Balanced together with balsamic vinegar and walnuts, the result is divine!

Ingredients
1/2 cup chopped walnuts
4 cups baby arugula
2 cups sliced strawberries (approximately 10 ounces)
2 ounces Parmesan cheese, shaved or crumbled (1/2 cup)
1/8 teaspoon salt
1/4 teaspoon freshly ground pepper
2 tablespoons aged balsamic vinegar
1 tablespoon extra-virgin olive oil

Preparation
1. Toast walnuts in a small dry skillet over medium-low heat, stirring frequently until lightly browned, 3-5 minutes.  Transfer to a salad bowl and let cool for 5 minutes.
2. Add arugula, strawberries, Parmesan, salt, and pepper. Sprinkle in vinegar and oil. Toss gently and serve.

Serves: 4
Preparation time: 20 minutes
