Another Win-Win Recipe: Sweet Carrot Salad
I think salad gets a bad rap. Did you ever notice how at parties or buffets hardly anyone touches it? So here’s a salad substitute that we think will change your opinion.
Most people love the taste of sweet carrots. And we encourage everyone to eat what they love while giving their body what it needs. That’s why we call it a win-win!
Want more good reasons to substitute carrots for less healthy foods?
Carrots are a good source of Vitamin C, Vitamin B6, Vitamin A, Vitamin K, Folate, Iron, Potassium, Copper, Manganese and Dietary Fiber.
PLUS they are very low in saturated fat and cholesterol.
2 tablespoons walnut oil or canola oil
2 tablespoons lemon juice
1 tablespoon honey
1 small shallot, minced
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
2 cups shredded carrots (about 4 medium)
1 cup peeled and shredded celery root or celeriac
1/4 cup golden raisins
1/4 cup chopped walnuts, toasted if desired
1. Whisk oil, lemon juice, honey, shallot, salt and pepper in a large bowl.
2. Add carrots, celery root, raisins and walnuts. Toss to combine.
You may find celery root in the refrigerated produce section near other root vegetables. To peel it, remove the thick skin with a knife or peeler. You may need to peel around the root a few times.
