farm-standIn history humans have eaten foods that are grown locally and seasonally. This way of eating provides optimal nutrients, the freshest foods and foods that are appropriate for our bodies during that season.

Today, due to modern technology, we no longer eat just what is in season but we eat everything, regardless of the weather or location. But just because a certain food is available doesn’t mean that it’s the best food choice for us. If we regularly eat foods that are out of season and from various locations, this can unbalance our body and mind and negatively affect our health.

Crunchy Lentils

If you want to have more energy, a sharper mind, and feel less stress,  try this!

LENTILS are generous in phosphorus, calcium, potassium, zinc, molybdenum, iron and even B complex, may be the most nutritious of all legumes and one of the most popular around the world.

CELERY helps synovial fluid production to ease achy joints…ah sooo good for the joints.

GREENS are full of magnesium, iron, potassium, phosphorus, zinc, calcium and vitamins A,C, E, K and folic acid.  They are blood purifiers, immune strengtheners, full of flora and enzymes (if raw or barely steamed) to help digestion, clear congestion, and elevate your mood.

OLIVE OIL contains oleic acids, a type of fatty acid, good fat, to help cleanse the blood vessels.

LEMON JUICE is preferable to vinegars because it is fresh, unprocessed, contains no yeasts and is alkalizing (which is great for American diets laden with acidic foods.)

THYME is a natural antifungal, good for respiratory congestion, and crampy gassy bellies.

BLACK PEPPER stimulates digestive juices and eases sore joints with it’s anti-inflammatory properties.

GARLIC is the natural miracle food, antiviral, antifungal, antibacterial, lowers cholesterol and more.

1 1/3 cups cooked green or brown lentils
4 large celery stalks, sliced thin
6 ounces baby spinach leaves (use the type that is pre-washed)
2 Tbs Olive Oil
3 Tbs fresh Lemon Juice
Pinch of dried Thyme
Black Pepper to taste
Minced Garlic to taste

  1. Combine lentils, celery and spinach in a large bowl
  2. Drizzle olive oil and lemon juice over it
  3. Sprinkle generously with seasonings and toss

Serves 4
