LENTILS are generous in phosphorus, calcium, potassium, zinc, molybdenum, iron and even B complex, may be the most nutritious of all legumes and one of the most popular around the world.
CELERY helps synovial fluid production to ease achy joints…ah sooo good for the joints.
GREENS are full of magnesium, iron, potassium, phosphorus, zinc, calcium and vitamins A,C, E, K and folic acid. They are blood purifiers, immune strengtheners, full of flora and enzymes (if raw or barely steamed) to help digestion, clear congestion, and elevate your mood.
OLIVE OIL contains oleic acids, a type of fatty acid, good fat, to help cleanse the blood vessels.

1 1/3 cups cooked green or brown lentils
4 large celery stalks, sliced thin
6 ounces baby spinach leaves (use the type that is pre-washed)
2 Tbs Olive Oil
3 Tbs fresh Lemon Juice
Pinch of dried Thyme
Black Pepper to taste
Minced Garlic to taste
- Combine lentils, celery and spinach in a large bowl
- Drizzle olive oil and lemon juice over it
- Sprinkle generously with seasonings and toss
